The second best dish I had while in Madrid was this: grilled razor clams. We had this at a very quaint and typical tapas bar in the La Latina neighborhood, right next to the Rastro flea market. This establishment has been owned by the same family for generations and the current owner is a cool madrileño named Raul. You can tell he’s extremely proud to keep the family business, and he was more than gracious to those who were not very willing to try the Madrid favorites: braised snails, grilled sheeps stomach, and crispy pigs ears to name a few. However, I thought these were the best, and was quite sad when there weren’t enough for seconds. And they’re so simple to make! All Raul does is throw on the grill and finishes them off with a squeeze of lemon. Faaan-tastic.
