Southern food has always held a special place in my heart. Not only is it hearty and comforting, but the people who make it are always so warm and welcoming. But as a resident of the North, really good Southern food is hard to find. So when I got my issue of Bon Appetit this month featuring food & restaurants in the South, I had to try at least once recipe. But I didn’t realize how long it would take to finish their version of Chicken & Dumplings…

Don’t get me wrong, it’s not hard. But there’s a lot of work to be done for the many components of this dish: mixing and portioning the ricotta-parmesan dumplings, roasting the chicken breasts, chopping the veggies, getting the roux to the right color, shredding the chicken meat, cooking the veggies, adding the herbs, cooking the dumplings, etc. etc. etc. Sigh. But in the end, it was totally worth it. The dumplings were tender, the chicken and veggies were hearty, and the broth was like a light mild gravy. AWwwheueuYUM. Good thing I didn’t half the recipe.
