When Top Chef first started, I thought the series was going to be short-lived. At the time, the Food Network was the only major source of food-related television, and I just didn’t think people would be able to appreciate the composition and flavor of competitive cooking through a TV screen. But then I got hooked. The dramatic contestants and the cutthroat competition was a stark contrast to the campy Rachel Ray and douchey Blobbly Flay. Though I still watch the Food Network from time to time, I definitely give Top Chef all the credit for changing my perspective on cooking.

This isn’t the first recipe I’ve adapted from an episode of Top Chef, but it’s definitely is the biggest success so far. This dish is adapted from Grayson and her Restaurant Wars dish: Schaum Torte with Vanilla Meringue and Champagne Berries. Except here, I made some brown sugar & balsamic vinegar ice cream and macerated the berries in riesling. Together the flavors contrast with the nutty ice cream and the tart fruit, and the creamy ice cream plus the cloud of meringue creates an awesome textural contrast. What a perfect way to enter the new Lunar New Year!
