In Ajax, ON, just outside of Toronto, my friend took me to her Aunt’s house where they were celebrating her cousin’s 17th birthday and her Aunt’s 60th. Her family, being Filipino, had an enormous spread of Filipino food: baskets of lumpia, extra saucy barbecue ribs, Filipino noodles, fried fish, the birthday cake (red velvet), and finally lechón. Lechón is a roasted suckling pig cooked until the skin is shiny & crispy, and the meat underneath is tender and juicy. This marks the first time I’ve ever had lechón and holy crap, I almost cried when I saw it. I am so thankful for being such a welcomed guest! Happy Birthday Jenna & Auntie!!
